Healthy Eating In: PB&J spirals

This adorable little turn on the classic PB&J is something we picked up from the Biggest Loser Cookbook. It’s a great snack to have along with some fruit!

1 Red Delicious apple, sliced
1 La Tortilla Factory – Tortillas- Low Carb Smart & Delicious
½ Tbsp regular Skippy creamy peanut butter
Welch’s Concord Grape Jam, 0.25 Tbsp

Directions: Set a medium nonstick skillet over medium heat for about 1 minute, or until hot. Place the tortilla in the skillet. Cook for 20 to 30 seconds per side, or until just warm. Place the tortilla on a cutting board. Spread the surface evenly with the peanut butter followed by the fruit spread. Roll into a tube. (The recipe suggests slicing into 8 equal pieces. We enjoy it this way, like an old school fruit roll-up!)
